For this spoon sweet, we use only the peel. It is grated and gently debittered, then each piece is rolled by hand before going into the syrup. Sweetened with concentrated apple juice and no added sugar, the bergamot keeps its unmistakable aroma and the gentle bitterness that gives it its character.
