Korkoto is simply cracked wheat, and there’s much more you can do with it than you might think.
It has a long tradition in Pontic cooking and is an essential ingredient in tanomenos sorvas, a distinctive soup known for its gently tangy flavour and fresh mint.
But there’s much more you can do with it. Cook it, drain it and use it as the starting point for a hearty grain salad. One combination we particularly like brings together orange, carrot, cucumber, spring onion, hazelnuts, pomegranate and mint. Or simply use what you have: roasted or fresh vegetables, herbs, a handful of nuts and a simple olive oil and lemon dressing. Korkoto gives you a good base and leaves plenty of room to make the rest your own.
